Sushi Kinmedai Omakase



On 19 October, Our group went to a Japanese restaurant Sushi Kinmedai Omakase which is located in Publika Kuala lumpur.





  • History of the restaurant 
  This restaurant is originality from Tokyo Japan, they serve fine authentic sushi and sashimi, sourced from Japan Tsukiji fish market. They guarantee the freshest catches and finest ingredients supply from Japan market that air flown weekly to ensure the quality.
  Their signature items are Natural Tuna (maguro), Uni and Tai with compliments finest Sake, Shochu, Japanese wine and Champagnes. Their lunch served premium set lunch, while Omakase course and Ala Carte for dinner. Kinmedai is a name of one of a famous fish in Japan.

When we went to this restaurant, there were many families. Also, almost of them were Japanese. As a reason, this restaurant is belong to a condominium which is a lot of Japanese stay. Therefore, we think target market of this restaurant is family.

>When we have arrived this restaurant, there were already prepared condiments, plates and chopsticks.
>They gave us Oshibori (wet towels) and menus per person after we took seats.

They provide many kind of food and beverages. All foods are very fresh and good quality because they use many ingredients which is imported from Japan. Also we can feel exactly Japanese taste since there are some Japanese chefs. In addition, we can enjoy to drink Japanese alcohol such as Sake, Sho-chu and beer. Especially, lunch menu is very reasonable.

Atmosphere and decoration of restaurant was classical and traditional Japanese style. 
For example,


>Tatami for floor 
>a small bridge which is made of wood in entrance
>bamboo as a foliage plant
>some seats have Sudare for partition 
>All tables and chairs are wooden
> flatware materials are clay that looks traditional Japanese crockery



>Decoration of Kinmedai (one of the famous summer fish in Japan) in the wall

>This restaurant's lay out is separated four part
> Terrace seat 
> ZASHIKI which is sitting on the ground and there are also table depending on the hight
>Sushi counter  which is open kitchen. Chef cook the sushi front of customer and serve to them. Sushi seat located right hand side from this picture. 
>Group reservation this restaurant is corresponding with some group customers. There is also partition  wall depending on how many customers come there.




  • Restaurant staffs
They were all friendly and kind for customers. Also there were some Japanese staffs.The stuffs are very friendly and have a good patience for people. 
The stuffs can speak Japanese, Chinese and English so most of them can talk and explain with the customer. 



  • Any others
>They gave us a 15% discount ticket in front of the restaurant. It could be used in that day. 
>There are some tables outside so customers can smoke if they want




  • Our orders
>TEMAKIZUSHI NATTO and KANPYO
Natto is a traditional Japanese food made from soybeans fermented. In our opinion, this natto’s taste is strange especially for foreigner. But it be good opportunity to taste Japanese local food.
Kanpyo is sometimes romanized and pronounced kampyō, are dried shavings of calabash, a type of gourd. Kanpyō is an ingredient in traditional Edo style Japanese cuisine, and cooked and flavored kanpyō is commonly used in temaki suhi roll. The taste is little a bit sweat and it can be good taste if you eat with soy sauce.



>Salmon sushi roll 
This salmon sushi roll origined from Canada which is called California roll since 1974. And it has been arranged by restaurants. In kinmedai, they add vinegar sauce under sushi roll. The taste of  this sushi can that with gusto for foreigner.



>Lightly roasted chicken 
This is also Japanese traditional local food. This chicken add with sweat sauce which is mixed with sauce and sugar. The taste of this chicken is similar as Teriyaki chicken. It must be popular for foreigner. The taste of this meal remind Japanese missed Japanese local taste.




>Tempura udon/soba
Tempura udon/soba is a classic Japanese dish of thick wheat noodles (udon) or buckwheat noodles in a savory hot broth garnished with crisp pieces of tempura vegetables and shrimp.







>SYABU SYABU
a Japanese dish of pieces of thinly sliced beef or pork cooked quickly with vegetables in boiling water and then dipped in sauce.in kimedai, there are two kinds of beef meat Japanese and Australian beef. The price is depending on which meat we choose. The meat is soft and juicy.








Advantages
>All menu has pictures expect beverages
>Atmosphere of restaurant is exactly Japanese style so that customer can feel Japan.
>This restaurant is near by KL and easy to access
> This restaurant is pork free. 
>The restaurant is vary clean and quite, people can get very good relax in here.
>People can have very traditional Japanese food here cause the chef comes from Japan.
>They provide reasonable lunch menu

Disadvantages
>Recommended menu of the day was complicated

















>customers have to take off their shoes in this restaurant.


>The food was not enough for us because amount of per serving is small portion.


Solutions to overcome these disadvantages
>Recommended menu of the day doesn't have picture so people cannot image the menu without Japanese. To overcome this problem, they should provide the menu with pictures which is easy to understand by anyone.
>taking off their shoes is kind of traditional culture in Japan but nowadays it became a old style because it is wasting time and troublesome.
>we understand that the restaurant can not make the price become cheaper but they can increased food portions.


overall
We really enjoyed having dinner in Sushi kinmedai omakase. We could feel traditional Japanese style because of the atmosphere and design of this restaurant. All the foods was delicious and high quality so we were very satisfied for this restaurant. Actually, there were some points that made us to be disappointed but they will be able to easily improve.
Overall, we recommend you to go to this restaurant!!!!!!

    Nami Yamauchi
    1. Discipline Specific Knowledge
    For food service sequence, there are a lot of sections and we need to understand all the process. The process is very important for doing food service sequence so I tried to memorize and practice that we learn in the practical class. When I was doing the service sequence first time, I was confused because I didn't much understand all the process. I have practiced a lot of time for memorizing and doing well. After that, I am getting better than the first time. In addition, I was considered that we have learned in the theory class. I have got a lot of knowledge in the theory class. The specific knowledge is useful for food service sequence. Therefore, discipline specific knowledge is very important skills for food service sequence. The skills will be helpful for my future because it works in practice situation. I will be able make use of the skills that we learned in the class.

    2. Thinking Problem and Solving Skills
    This skill is very important for food service sequence because it might happen unpredictable accidents in service. At the situation, I need to think and solve the problems. There are a lot of trouble situation that we can be face on during serve to guests so I should prepare to overcome for the trouble. We can take measures for some problem that may happen often. If we think about some problems before it happening, we will be able to solve the situation. It is able to ensure a flexible response to problems. Hence, thinking problem and solving skills will be helpful skills for future because a lot of troubles will happen on the job. That is why I need to get this skill for my future overtaking.

    3. Communication skills
    We should communicate with guests in food service sequence. I was confused when I practice the service sequence in the practical class. This is because I didn’t know what I need to tell or talk to the guest. I practiced the service sequence many times in the practical class. After some practices, I learned that how can I greeting to the guests, how to up sale the menu of the restaurants and how to talk with the guests. It is very important to communicate with the guest for food service sequence. Therefore, it can be helpful skills in the future for me because I should communicate with the guests as a server.



    4. Communication skills
    When I serve to the guests, I have to communicate with them. I need to up sale the menu of the restaurant and have some conversation while serving. It makes good atmosphere between servers and guests. Nobody have fun with the restaurant if there is no conversation. The guests will not be satisfied if servers are not friendly. So we should be friendly and take care of the guests all the time. Therefore, we need to practice in the class for getting communication skill. Taking a lot of time for practical makes us to get the skills.

          Kaoru Kagami
    The first important capabilities that helped me complete this task successfully was communication skills. To achieve this skills, I made some efforts during a food service sequence. For example, I tried to remember all menu and things that I should have known about this service and practiced to speak English with fluency. It is because Memorizing all menus and understanding rules of serving were essential to doing this task which is need to communicate with customers, even if it is foreigners without any problems. I think this attention is one of the most important and element factor for professional server in this international society. Therefore, I hope that this training will help for my career in future.

     Second important capabilities that helped me complete this task successfully was thinking and problem solving skill. This skill is important when we do a food service sequence because there are some unforeseeable problems. These things happening by unexpectedly and unintentionally. Therefore, I tried to achieve this skill by doing some efforts such as keeping in mind that there could be some problems and preparing to overcome the problems every time. For example, keeping the customer who is my charge in view was an effective way. When something happened accidently, I could notice as soon as possible and solve the trouble. These skills will be helpful to building a career as server in my future because a food service sequence is always face to customers and it means quickly problem solving skill will be considered as a one of an elementary ability.

     Third important capabilities that helped me complete this task successfully was disciplining specific knowledge. I have learned some technics and information in theory class that should be to made use of in practical class. However, it was really difficult for me than expected before to use skills which is from logical class for an actual performance in practical class. It is because during a food service sequence, I always feel uneasy about everything and cannot afford thinking extra things. To achieve this skill, I tried to exactly understand each contents that lecture taught in class about service sequence and memorize important process of that to become doing these things without thinking. Understanding process and doing a lot of practice by using knowledges as much as we can in practical class will help to become a good server. Moreover, the ability that discipline a specific knowledge can help me when I have job in future. It is because what we are studying are practical and easy to use as a professional server.

     I can improve my communication skills by some hard workings such as practicing English and memorizing every sections of food service sequence. Fortunately, I am studying hospitality management in English and have a lot of opportunities for using English. Therefore, having university life in English can be one way to improve my communication skills for food service sequence. Also, learning many techniques and knowledges that can be gained by all class will help me to have better communication skills. Communication skill is having a good conversation with customers and make customers feel nice while serving. Therefore, all information which I can know in University are important to improve my communication skills.


    Rei Watanabe
     
    a) Firstly, when it comes to lifelong learning, when I was in japan, I had experience as worked in restaurant and café. So I could use of my experience that I worked in japan. However, I have never done the experience that serve to customer. It was the valuable experience for me to learn in taylors university.  Because when I worked in japan, I just have done that cook in kitchen or cashing the money and made the beverage such as coffee or latte. Secondly, in communication skill, it can be most important material to achieve my goal. And in my class, I usually work with my class mate who came from china. It was also first experience for me to take a class that mother language is not English or Japanese. It is really flesh and difficult for me. Some time we have misunderstanding with each other in a class so I always have to think about how to tell my opinion easily to let him understand what I said. Therefore, I also have a necessity to know their nationality thinking. Thinking and problem solving skills, it is important to work in any place. I have felt that it is really necessity for our class. One student who was in charge of manager had to prepare the equipment for class forgot to submit to the equipment office. At that time, we could not solve this problem but we might have the problem that we did not anticipate.

    b) These skills can be used of our future. Lifelong learning is come from experience that we have learned. It also related to the future when we have the time to work in place. Communication skill use of any work place as I mentioned. If I work in foreign company or hotel. We have to know each other.
    We also aware in a work place. The reason is that work place make us stressful easily. It means that we might have argument in there. To solve this problem, this skill is necessity for us.
    Thinking and problem solving is that I have to deal with any problem that we do not anticipated. I do not have idea where I want to work in the future but this skill is used of anything even our life.

    (3) Please describe how you can improve at least one of these skills that you mentioned above
    In my opinion, this class module is able us to improve our skills that I mentioned. Because this semester, we are leaning the basic of service sequence and how to communicate with customer. Next semester, we are going to serve real customer who come from out of taylors or students. We might have many problems that we do not expect. This opportunity will give us the experience such as thinking and problem solving skills. And also this time give us the experience of improving communication skills because as I said we are going have the opportunity to serve real customer but we can not decide the customer who is going to be invited. So we have to be getting adapt to all kinds of customer. I can be improving our communication skills.

    In my opinion, Taylor’s Graduate Capabilities is about to develop students personal skills. I think the most important points which helped me complete the task “Food service sequence” have three: first is discipline specific knowledge, second is thinking and problem solving skills, and the last but not least is communication skills. All of these practical classes’ experiences helped me a lot to have a better understanding of this course, to digest the theoretical knowledge more easily. I’ve accumulated some experiences, solidified and extended my theoretical knowledge, as well as improved my thinking & problem solving skills, and analyzing for the actual problems. Last but not least, these practical experiences improved my communication skills as well.

    (2) How well did you achieve the skills that you have mentioned above?
    From my perspective, I think I am not done well enough. I still have some communication problems during the practical class, although I don’t want that to be the case. However, there are several times I’ve even completely misunderstood others’ words. That’s why I would like to improve my professional vocabulary of the discipline specific knowledge, and the level of spoken language. But on the other hand, my independent thinking and problem solving skills is much better. I think I can handle most of the problems I’d ever encounter in the practice. To be honest, my communication skills still need to improve, but it is better than before.

    (3) Please describe how you can improve at least one of these skills that you mentioned above
    This course may be a new challenge for most students. Because there are many specialized/professional vocabularies need to memorize which is really important for the understanding of this course. So, I would like to strengthen my professional vocabulary, in order to have a good realization. I probably need to memorize and repeat again and again, but the knowledge accumulation, which need daily constantly consolidate and practice will grow somewhat. In addition, I also need to improve my language communication skills. I will try to improve my verbal communication skills through constantly practice and communication, and I would like to take more responsibilities in the further teamwork to achieve more.
